Apple Enchiladas

What happens when you have half a dozen apples that are about to go bad, and a pack of tortillas that are also about to get on the green and fuzzy side? Make apple enchiladas of course! Pinterest to the rescue again indeed! 

A lot of the recipes on Pinterest called for canned apple pie filling.  It kinda defeats the purpose of using my apples that were about to go bad, so I turned to this recipe from Cooking with Libby. 

The house smell amazing with the aroma of baked apples and cinnamon.  This is probably one of my favorite fall smells.

Wrapping them up got really messy because the tortilla, I learned, were actually very fragile.

Getting it soaked in a butter sauce with cinnamon was also another surprise I did not see coming, but I guess that makes sense.  What is dessert without butter?

So that butter syrup got all soaked into the tortilla and the apple filling got buttered up and reduced even more it was sooooo good.

Of course, I topped it with vanilla ice cream, caramel sauce, and whipped cream.  Definitely way better than a few rotten apples.
