The System is Down

I have been so embarrassingly late at posting this week! My new rotation has begun and the hours are later than normal, so my schedule is totally off!   Thursday had been incredibly trying at rotation because the computers had gone down for almost 4 hours and it was absolute chaos during those times.

That being said, this #TBT was stuck in my head.  As always, my coworkers had never heard of it, so they thought I was crazy.  Again.

Happy Holy Thursday, and here is the last of the recipes for this Lent:

Salmon cakes

16 oz fresh or canned salmon

¼ onion, finely diced

1 celery stalk, finely diced

¼ cup mayo

1 egg

Approximately ½ cup almond flour

Sea salt and pepper to taste

1 tbsp olive oil

Mix all ingredients except almond flour.  Add almond flour until mixture begins to stick together.  Form patties by taking a handful of the mixture and pressing it together with your hands.  You want the patties to be approximately 1 inch thick.  Heat olive oil in pan/skillet over medium-high heat.  Place patties in pan, and cook until golden brown.  Flip, and repeat the process with the other side.  Serve with dilly-mayo recipe below:

Dilly mayo:

Fresh dill, chopped

½ cup paleo mayo

Lemon juice

Sea salt and pepper to taste

Mix all ingredients and serve with salmon cakes
